This Breakfast Cheesy Ham and Tater Tot Casserole Recipe is a frugal and easy recipe for any day of the week. Filled with ham, cheese, potatoes and eggs, the entire family will love this recipe. It also is perfect for feeding a crowd at brunch!
Casserole recipes are perfect for feeding a large crowd making them ideal for holiday gatherings. My family and I have been enjoying this breakfast casserole every year on Christmas morning. I call it Christmas Casserole and the kids make sure that its in the oven before opening our stockings.
It is a Christmas tradition!
Cheesy Ham and Tater Tot Casserole (AKA Christmas Casserole)
Ingredients
- 10 Eggs
- 3/4 cup Milk
- 8 oz Diced Ham
- 1/2 Diced Onion
- 1 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Paprika
- Salt and Pepper
- 2 cups shredded cheese
- 32-ounce bag of Frozen Tater Tots
- 2 Green Onions Sliced
Directions
- Preheat oven to 350 degrees.
- In a large casserole dish pour tater tots in the bottom.
- Sprinkle diced ham and diced onions on top of the tater tots, set aside.
- In a large mixing bowl whisk together eggs, milk, garlic powder, onion powder, paprika and salt and pepper.
- Pour egg mixture over tater tots and top with cheese.
- Bake in oven for 40-50 minutes until eggs are fully cooked through.
- Top with green onion and enjoy!
