Taco Soup is a family favorite around my house. During the winter, I like to put it in the crock pot early Sunday and let everyone munch on it all day any time of year. If friends show up, you can just hand them a bowl, because this recipe makes a lot of slow cooker taco soup!

If you’re looking for a fun variation on this recipe, you should TOTALLY check-out Shockingly Delicious’ recipe for Slow Cooker Black-Eyed Pea Taco Soup–it sounds so fantastic, I might make that this weekend instead of my normal Crockpot Taco Soup!

I am all about cooking with my crock pot. I like things for cook slow and over time, because it makes them so flavorful, I am so not a pressure cooker kind of gal.

What You Need To Make Slow Cooker Taco Soup Crockpot Dinner

  • 1 lb. ground beef, Cooked (or ground turkey if that’s more your thing)
  • 1 Large Onion, Chopped (Sometimes I cook this along with the beef, and sometimes I leave it out, it just depends on what kind of mood you’re in, really.)
  • 1 Can Pinto Beans (You can substitute black beans here instead if you just really love them.)
  • 1 Can Kidney Beans
  • 1 Can of Corn (But you can totally leave this out if you hate corn. I am so not a corn lover, but everyone else in my family loves it, so I always leave it in. I also feel this way about black olives, and that’s why I never add them to my taco soup.)
  • 1 Can Ro-Tel (Really any spicy diced tomatoes and diced green chile combo will do, but I always just use Ro-Tel tomatoes green chile, because that is what my mom used to use.)
  • 1 Can Diced Tomatoes. (I usually get a big ‘ol can for this if I am having lots of people, or I just use a smaller can if it’s only the fam.)
  • 1 Packet Taco Seasoning Mix
  • 1 Pack Ranch Dressing Mix. (This is the secret ingredient that gives the soup it’s special zing! Don’t leave this out unless you want blah soup.)
  • 1 1/2 Cups Water

How To Make Slow Cooker Taco Soup with Rotel

  • In a large skillet, brown your meat. (This is the part where you can add in the onions or not. I like to, just because I love the smell of ground beef and onions cooking.)
  • Open all the cans and dump everything into your crock pot. Juice and all.
  • Let it sit on high for an hour or two then turn it down to low and you have the best darn crock pot taco soup you’ve ever eaten!

I usually serve mine with tortilla chips, but my husband swears by corn chips, so it’s kind of your choice there. He also loves to add just a dollop of cream cheese to his bowl to make it just a little creamier.

FAQs

Will taco meat dry out in crockpot? ›

Taco meat can dry out if you don't add extra water to the slow cooker. I suggest adding water before turning on the heat. This will keep the meat nice and moist, and serves the double purpose of helping the seasoning melt into the meat!

What can I use to thicken taco soup? ›

Add Cornstarch or Flour

If you want to thicken up your taco soup quickly, cornstarch or flour could be your best friends. Mix one tablespoon of cornstarch or flour with equal parts water in a small bowl until smooth.

Can you put uncooked ground beef in the crockpot? ›

Yes, you can totally cook raw beef in a slow cooker. Many slow-cooker chili recipes have a step for browning the beef before it goes into the Crock-Pot. While this step isn't necessary, caramelizing the meat creates richer, bolder flavors.

What is a slow cooked taco meat called? ›

Barbacoa is typically made out of tougher cuts of meat that require long, slow cooking times. When done traditionally, barbacoa is made with large cuts of meat or whole animals. How to keep ground beef from drying out in a crockpot? ›

Leaner blends require more moisture, so make sure to add enough liquid. Water is fine, but beef stock can add extra flavor. Plus, it contains collagen which will keep everything tender. If you're using a fattier blend, it will do better on the Low setting for a longer period of time.

How do you keep meat from drying out in a slow cooker? ›

To keep a pot roast from drying out, your slow cooker needs liquid to create a moist environment, and that can include meat or vegetable stock, wine or water. This doesn't mean the meat should be submerged; a cup or two of liquid will be enough, since the cooker is covered and liquids stay trapped inside.

How do you keep taco meat from drying out? ›

Add more liquid.

Depending on the type of ground beef I use, sometimes I'll add a little extra water, chicken broth, or even tomato sauce to prevent it from drying out.

Will beef dry out in slow cooker? ›

Beef joints can especially go from tender to dried out in a short amount of time, making them a tricky cut to perfect. When you search for a slow cooked beef joint, choose one with plenty of fat. A lean joint won't provide the marbling needed to tenderize the joint during slow cooking.
